Admittedly, all three of my characters are involved with Quidditch. Lydia is particularly obsessed, although Paris follows closely. I don't know how exactly to organize it, but perhaps schedule practices so that the Quidditch players can interact? There could be a thread with sign-ups. I know that Slytherin team only has two players...but perhaps a volunteer could pretend to be the rest of the team until more people join? Or the two players could just pretend that the other members of the team are there? I say put the Captains be in charge of organizing the practices and signing up. If the captain becomes inactive or fails to organize, they can still be a part of the team but the captaincy can be put up for grabs again.
As far as actual games go, that would be quite hard to roleplay out without godmodding. Perhaps random points could be put into a hat and one of the admins could pull them out of a hat for each chaser and such? The only problem is...some players are more experienced than others and have characters that work harder (sorry, but it's common logic. Since someone obsesses about the sport and is constantly practicing, they would probably have more skill than the person that sort of cares.) I don't know. I just really want more Quidditch...
So there are my suggestions. If anyone could solve the problem of determining who wins and scores the most please add. I would say put an admin in charge, and they can watch and see what characters work the hardest and all, or just simply are really gifted, but they could be bias. I don't know...unsolved problem.
